Most are in such a hurry to get their scallops back home to cook them that they're missing out on the best time to prepare your scallops at their freshest moment! After you collect 50 or so scallops, whip out these easy to pack ingredients and make a 5 star dish for your crew while on the water! It's very refreshing and gives your team a 2nd burst of energy to collect their bounty.
(4) Whole Limes
(0.25) bushel fresh cilantro
(1) teaspoon minced garlic
(2) jalapenos
(0.5) small red pepper
(0.5) whole mango
pinch of salt
pinch of pepper
Bring a small Tupperware with you and place the 50 shucked scallops in the tupperware after rinsing with a bottle of water.
Cut three of the whole limes in halves and squeeze the limes on the scallops. Give the container a good shake and let the scallops soak up that lime juice.
Dice up the jalapenos, red pepper, mango and mix in with the scallops.
Dice up the cilantro and leave half of it to the side. Mix in half of the cilantro with the scallops.
Give the container a good shake and let sit for up to an hour. The longer the scallops soak up the juice the better, but we understand if you cant wait because of how tasty it's looking!
Place scallops on a plate or scoop the mixture with a spoon into some tostitos scoops and sprinkle salt & pepper over. Take the rest of your cilantro and lightly sprinkle over. Finally, squeeze the rest of your lime juice on the scallops and enjoy!
